Amazing Ice Cream without a Machine
Think you need an ice cream machine to make ice cream? Think again.
From the wonderful land of the Indian Subcontinent I present you with ice cream’s most awesome relative: KULFI.
To make kulfi you need exactly three things: 1 can of sweetened condensed milk, 1 pint of heavy cream, and a little bit of flavoring. What flavoring? Any flavoring. Rosewater-pistachio is one of my favorites, as is Thai ice tea.
Ice cream really has 3 ingredients: something sweet, a milk solid and a milk fat. The condensed milk is sweetness and solids, and the cream is (obviously) the fat. So now that we’ve got our bases covered, lets get cookin’:
STEP ONE: Mix your flavoring into the sweetened condensed milk. Whether it’s chocolate or berry extract or whatever, that’s where it goes. (Except for tea flavors, but ssshhh just come to a meeting and we’ll talk about those)
STEP TWO: Whip the cream until it forms stiff peaks. Stiff peaks? Stiff peaks.
STEP THREE: Gently combine the whipped cream with the sweetened condensed milk, and pop it into the freeze for 4 hours.
STEP FOUR: EAT IT!
Yes, yes, it’s just that easy.
